  • Fresh yeast - 30 g (one third of a pack).

Cooking:

  1. Slightly heat a glass of milk so that it is barely warm. Dilute in it a piece of fresh yeast, sugar and 2-3 tbsp. spoons of flour. Let the resulting slurry brew in a warm place for about 15-20 minutes.
  2. When the mass begins to foam intensively and rise, add two chicken eggs, the remaining flour, and salt to it. Knead the dough without lumps and then gradually add soft butter. For convenience of work, it is undesirable to heat it to a liquid state. This oil makes the dough tough when baking.
  3. Knead the dough well on a table lightly sprinkled with flour. When the lump stops sticking to the table and hands, and becomes glossy, return it to the pan and cover with a lid or linen towel.
  4. Prepare the filling. Sort and chop the mushrooms into large strips. Cut the onion into thick half rings. Fry mushrooms and onions separately in a small amount of butter, salt them and season to taste.
  5. Divide the risen dough into two unequal portions.
  6. Roll out most of the shape and size of the prepared baking dish. The test should have sides.
  7. Grease the bottom layer with a little soft butter. Sprinkle with fresh or dried herbs if desired. Put a layer of mushrooms, then - onions.
  8. Roll the remaining piece of dough into a thin board and cut into small strips.
  9. Weave a net out of them and cover the filling. Moisten the edges of the lower layer and strips with cold water and press against each other so that they are well connected to each other.
  10. Let the assembled cake stand and rise for 20 minutes, put it in the oven. Cook at a temperature of 180 or 190 degrees for 40-50 minutes.
  11. 5 minutes before cooking, brush the entire surface of the pie with a beaten egg to form a delicious glossy crust.

Closed mushroom pie from puff pastry

Ingredients:

  • Packing of puff-yeast dough - 500 g.
  • Cumin - 1 tsp
  • Oyster mushrooms -150 g.
  • Champignons - 150 g.

  • Long grain rice - 50 g.
  • Onion - 2 pcs.
  • Butter - 150 g.

Cooking:

  2. Mix together two chicken eggs, 100 g of soft butter, sour cream, wheat flour, mineral water and soda. Knead a dense and plastic dough.
  3. Divide the lump into two parts. The part intended for the bottom layer should be slightly larger than the top. Roll out both pieces of dough into layers about 1 cm thick. Put the lower layer in a greased form so that there are sides.
  4. Melt the butter in a frying pan and crush the clove of garlic to it. Fry canned white beans in this oil until golden crispy. Remove it with a slotted spoon and set aside in a bowl to mix the filling.
