The first thing you should take care of is business registration. There are two options here: individual entrepreneur or LLC. In the event that a person is already an entrepreneur, you need to check whether the list of activities that were indicated in the application for registration of an individual entrepreneur contains a code that makes it possible to engage in this type of business. Code 55.50 “Activities of restaurants and cafes” allows you to sell baked goods at the place of their production, that is, if a person intends to produce and sell products in the same place, this option is suitable. However, for example, if you want to supply products to a store or cafe, you need to add codes to the list retail trade.

If there is no business partner and is not planned, then you should work as an individual entrepreneur, therefore, if you have a partner, more suitable option- OOO.

Choosing a suitable premises for a bakery

Choosing a legal form is the initial step that needs to be taken. Everything here is quite simple: it is profitable to open your own mini-bakery in a public place, because the products will be sold to end customers. In large cities, this may be areas near metro stops, shopping and business centers, shops, and cafes.

To begin with, you can get by with renting the premises, but with a preliminary agreement on the possibility of its subsequent purchase. The rental price will depend on the city and the attractiveness of the bakery’s location. It is worth noting that prices can be completely different. In Moscow, for example, running a mini-bakery costs approximately 250 to 1000 rubles per square meter.

You should know that in order to open your own small bakery, 150 may be enough square meters. On this area it will be possible to place both a sales area and an organizational space for production. The cost of such premises can cost about 75,000 rubles per month, or even less.

The cafe or bakery store will need renovation, so this separate part expenses.

There are some SES requirements to the premises where confectionery and bakery products are made, which you need to know:

  • cold and hot water, sewerage;
  • Basements are not allowed;
  • ventilation is a mandatory requirement;
  • additional premises such as a warehouse and a toilet must be present;

Necessary equipment for the enterprise

It is worth knowing that you will need two types of equipment for a bakery: commercial and production.

For production:

  • stove (approximate cost 600,000 rubles);
  • proofing cabinet (about 40,000 rubles);
  • dough mixing machine (approximately 250,000 rubles);
  • table for cutting dough (about 40,000 rubles);
  • dough sheeter (about 20,000 rubles);
  • flour sifter (approximately 9,000 rubles);
  • baking trolley (about 12,000 rubles).

At the very beginning, you can get by with purchasing one unit of each piece of equipment. The presence of one stove will allow us to produce about 1 ton of flour per day, which is equivalent to 1600 kg of finished products.

It is possible to organize production of an incomplete cycle, thanks to which it is possible to get rid of kneading the dough. This will allow you to focus on baking and selling manufactured products. In this case, the cost of purchasing equipment will be significantly reduced, because you will only need an oven, a heating display and a freezer.

The necessary equipment to open a store will cost a maximum of 150,000 rubles.

You will need to purchase:

  • showcase;
  • cash register with subsequent registration with the tax office;
  • money box;
  • safe for storing cash and valuable documents;
  • cabinets for possible storage of products.

Additional costs will be for furniture and household equipment. The average cost of these goods is 30,000 rubles.

The most important employee in organizing production is the technologist. In addition, you may need:

  • bakers who will be involved in the production of products (the required number is 4 people, that is, 2 for each shift);
  • cashiers (2 people recommended);
  • cleaners (the number will depend on workload, but it is possible to provide hourly wages);
  • an accountant (not always needed, because there is an option to use the services or hire a part-time employee, which will cost much less than maintaining another employee).

To produce food products you will need special permits. The first thing you need to know is that each employee must have a personal medical record with him. In order to issue it, you will need about 600 rubles. This price includes everything necessary tests. The total cost of all necessary permits will cost a maximum of 60,000 rubles.

List of documents that need to be prepared in order to open a mini-bakery:

  • sanitary and epidemiological conclusion for products, which is issued by Rospotrebnadzor based on the results of the examination;
  • sanitary and epidemiological conclusion for production, which can be issued free of charge at the same Rospotrebnadzor if the results of the examination are provided;
  • Certificate of conformity, which can be obtained from the Federal Agency for Technical Regulation and Metrology;
  • conclusion from the fire inspectorate on compliance with all fire safety requirements.

Purchase of necessary raw materials for the bakery

It is worth understanding that baked goods are products that spoil quickly because they have a short shelf life. That is why raw materials need to be purchased before the start of production; there is no need to take them in advance. However, you can take care of drawing up an agreement with suppliers even before registering the enterprise.

The first question that will arise immediately after preparing the premises for the bakery is: what to bake baked goods from? It is worth knowing that butter buns require the highest grade of flour, or at least the first grade. In order to calculate the required amount of flour, you need to take into account the fact that the weight of the manufactured products will be approximately 30% more than the raw materials. This happens by adding other ingredients to the dough. The wholesale cost of flour is approximately 10 rubles per 1 kg.

You should know that you will have to spend a lot of time searching for suppliers. This is due to the fact that it is impossible to cooperate directly with flour mills, because they are not interested in the volume of purchases that will be needed for a mini-bakery. It is possible to take only large batches, but this is not necessary, because flour requires special storage conditions. Therefore, it is necessary to consider offers from intermediary firms that provide good conditions cooperation.

In addition to flour, you will definitely need pressed yeast, sugar, salt, vanillin, vegetable oil, baking powder, stabilizers, thickeners, food additives, and so on. Interested in how much raw material is needed for 1 ton white bread, it is worth knowing that the consumption is as follows: 740 kg of flour, 9.6 kg of salt, 7.5 kg of pressed yeast, 1.2 kg of vegetable oil.

A mini-bakery is a small enterprise specializing in the production of bakery products. It can work both independently and as part of HoReCa establishments, super- and hypermarkets.

 

Moreover, in some cities there are entire networks of bakeries that sell products through mobile units, for example, trailers. However, novice entrepreneurs most often open one enterprise, which is located in separate room. And to do this they need to take several steps.

Step #1 - Registration procedures

You need to start opening a mini-bakery by registering the enterprise. In the case of a mini-bakery, you should choose from 2 options: individual entrepreneur and LLC. If you are already an individual entrepreneur, check whether the list of activities that were indicated in the application for individual entrepreneur registration contains a code that allows you to engage in this type of business. For example, 55.30 “Activities of restaurants and cafes.” This category involves the sale of baked goods at the place where the product is manufactured, i.e. if you are going to produce products and immediately sell them, then this option will be ideal for you. In addition, retail trade should be added to the list of codes, but production should be set as the main activity.

If you are not going to share the business with anyone, then the easiest way is to work as an individual entrepreneur, but if there are several founders, it is best to organize an LLC. However, the choice of organizational and legal form is far from the only issue that remains to be resolved. Immediately after registration you will have to choose a taxation system.

The best option- UTII, if, of course, it is applicable. The fact is that this tax regime is introduced by municipalities and applies only to types of activities approved by the laws of the constituent entities of the Russian Federation. If UTII is not available, it is better to choose the simplified tax system of 6% or 15%. The simplified tax system can be applied by all enterprises whose annual income does not exceed 60 million rubles. (Clause 4.1. 346.13. Tax Code of the Russian Federation). An application to switch to a simplified taxation system should be submitted immediately after registering an enterprise.

Since the mini-bakery will sell products to the end consumer, it is advisable to locate it in a public place. In large cities, you can organize a business in close proximity to the metro, close to shopping and business centers. At the initial stage, it is better to rent the premises, but it is advisable to immediately discuss the possibility of a subsequent purchase. The rental price directly depends on the city in which the bakery will be located and the attractiveness of the location. Prices may vary significantly. The monthly maintenance of a mini-bakery in Moscow varies from 250 to 1,000 rubles. for 1 sq. m.

As for the area itself, 150 square meters will be just right. m. This is enough to organize production and a small sales area. Such premises can be found for 75 thousand rubles. per month. Separately, it is worth calculating the costs associated with repairs and other work on organizing the enterprise.

SES requirements

To open a mini-bakery in accordance with the law, the following requirements must be met:

  • availability of hot and cold water, sewer drain;
  • the room should not be a basement;
  • presence of ventilation;
  • the necessary household and utility rooms must be present, incl. warehouse, toilet;
  • The ceilings should be whitewashed and the walls tiled.

Step No. 3 - Purchase of equipment

For a small bakery full cycle you will need 2 types of equipment: production and commercial.

Production:

  • oven (cost ~ 600 thousand rubles);
  • dough mixing machine (~ 250 thousand rubles);

An accountant is not required; you can use the services of an outsourcing company, or hire a specialist on a part-time basis. In any case, it will be several times cheaper than maintaining another full-time employee.

Since the mini-bakery involves the production of food products, it is impossible to do without special permits. Each employee must have a personal medical record, the registration of which, together with the necessary tests, will cost 600 rubles. To open a mini-bakery from scratch, the following documents are required:

  • sanitary and epidemiological conclusion for production - issued free of charge by Rospotrebnadzor, but for this it is necessary to provide the results of the examination;
  • sanitary and epidemiological conclusion for products - issued by Rospotrebnadzor based on the results of the examination;
  • certificate of conformity - issued by the Federal Agency for Technical Regulation and Metrology;
  • conclusion of the fire inspection on compliance with fire safety requirements.

Step #6 - Purchase of raw materials

Baked goods are perishable products and cannot be stored for long. You should buy raw materials immediately before starting production. Of course, you can come to an agreement with suppliers even before registering the enterprise with the tax office, but purchasing their products “in reserve” is unacceptable. Once the premises are ready to start production, it’s time to worry about what to bake baked goods from.

The main raw material is flour. Only the highest grade is suitable for butter buns. As a last resort, you can use the 1st one. When calculating required quantity flour, it should be taken into account that the weight of the finished products will be approximately 30% greater than the raw materials. Naturally, this is achieved through other ingredients that are mixed into the dough. The wholesale price of flour is approximately 10 rubles. for 1 kg.

The issue of finding suppliers may become particularly acute. It is worth considering intermediary firms that offer flexible terms cooperation. Trying to contact flour mills directly is not practical. Firstly, they are not interested in the volume of purchases that a mini-bakery can afford, and agreeing to large quantities is stupid: flour requires special storage conditions. Secondly, it will take a long time to ensure that a large enterprise works directly with a small one. It doesn't benefit him. Thirdly, if the delivery fails, there will most likely be a refusal to further cooperate.

In addition to flour, you need compressed yeast, vegetable oil, salt, sugar, vanillin, baking powder, stabilizers, food additives, thickeners, etc. By the way, according to GOST, for 1 ton of white bread you will need 740 kg of premium flour, 9.6 kg of salt, 7.4 kg of pressed yeast, 1.2 kg of vegetable oil. As for buns, the final consumption of raw materials depends on the recipe compiled by the technologist.

Step #7 - Getting Started

When the premises are completely ready, employees are hired, equipment is purchased, and all permitting documents are in hand, mass production can be launched. You should also think about advertising and marketing. It is not at all necessary to invest a lot of money at the initial stage; you can get by with “little blood.” For example, a promoter will be a relatively inexpensive pleasure.
